Like many top Burgundy estates, Francois Mikulski is a true expression of terroir since its first vintage in 1992. They believe that vines, like people, require careful nurturing and attention. To cultivate healthy, ripe grapes, they use home-produced compost, environmental-friendly phytosanitary products, and practice careful plowing while maintaining the soil's biological balance. Wine yield is meticulously controlled to achieve optimal quality.
In the cellar, the wines are fermented with natural yeast over a period of 3 to 4 months in cool cellars built in solid rock. Following fermentation, the wines are aged for approximately 12 months in oak barrels, about 20% of which are new. Francois Mikulski considers fining crucial in achieving the wines' elegance, purity, and precision, as well as enhancing their aging potential. The entire process, spanning 30 months, reflects meticulous attention to every detail and showcasing the passion for wine.
The Domaine focuses on producing top-tier Meursault white wines. Spanning 8 hectares, their vineyards include several exceptional premier crus and outstanding village crus. The flagship wine Meursault Genevrieres 1er Cru, regarded as having the greatest aging potential for noted for its powerful elegance, comes from 50-year-old vines and yields about 3,000 bottles annually.
Similarly, the Meursault Charmes 1er Cru is cultivated from vines of similar age, producing approximately 3,700 bottles each year. This wine displays delightful notes of mimosa honey and Turkish Delight, complemented by aromas of carnation, lilac, violet, and hints of bergamot and nutmeg, delivering a rich and lingering mouthfeel. The Meursault Poruzots 1er Cru, also from around 50-year-old vines but with a limited production of just 2,400 bottles. This wine is refined and elegant, with an enchanting mineral character, embodying a more feminine profile.
The Meursault Goutte d’Or 1er Cru belongs to the Boillot family. Mikulski and Boillot family cooperate since 1992 through a sharecropping arrangement, features around 40-year-old vines and yields only 1,000 bottles annually. The resulting wine is vibrant, exuding rich aromas of honey, citrus, guava, lime, and passion fruit, offering a refreshing and straightforward taste.
